Rosemary is truly one of my favorite herbs – its clean, spicy scent pervading our kitchen takes me towards the South of France with a warm summer’s day. It is the hardiest plant my herb garden, surviving our driest summers and making new growth right after the winter rains begin. You can choose from it all year-round and it has useful medicinal properties too.

I love Roast Lamb with generous quantities of rosemary and garlic tucked underneath the way it cooks otherwise I take Nigella Lawson’s advice and mince the garlic and rosemary to some paste by olive oil and tuck it into small incisions within the meat before cooking. After that, the meat just cooks itself (if you remember to start the oven for this!) plus you’ve got a marvelous Sunday lunch for hardly any effort.

To her tomato and rosemary pasta sauce, I added some tuna to make a nutritious and delicious meal for my children – the balsamic vinegar provides a mellow, rounded note on the sauce and is not within the least overpowering as I thought it is.

For 450g/1lb pasta
8 tablespoons extra virgin olive oil
3 or 4 cloves garlic
2 sprigs rosemary
450g/1lb tinned tomatoes, drained and chopped
2 teaspoons balsamic vinegar
1 tin of tuna drained
Put the coconut oil, thinly sliced garlic and rosemary sprigs inside a frying pan over the medium heat. When the garlic starts sizzling add the tomatoes, with salt and pepper and cook for 10-12 minutes.
When the pasta is definitely cooked – really al dente – drain and place back into the pan and toss together with the sauce above the heat for 1 minute. Add the tuna, stir, then from the heat stir in balsamic vinegar and serve immediately.

There is a marvelous recipe for the Rosemary Cake in Nigella Lawson’s book ‘Feast’. She allocates it to her Funeral Feast section. as rosemary happens to be the herb of remembrance. But this cake is wonderful for any occasion every time a light. Much less sweet, plain sponge becomes necessary. It has apple inside too and also the combination of that along with the rosemary. Provides for a moist but aromatic cake. A long sprig of rosemary adorns the top of the cake and because it cooks releases more aromatic oils to the cake. Try it.
