Today I’m making Lemon Meringue Pie. Whilst visiting family over christmas I was treated to this delight, by my auntie Debbie. This recipe is so delicious I had to share it with you all! It’s so yummy and such a refreshing pie that is really easy to make. I hope you all enjoy it!

Recipe:

Sweet Shortcrust Pastry:

225g Plain Flour (1.5 cups)
3 tsp Icing Sugar
140g Butter
1 Egg Yolk
Approximately 2 Tbsp Water

Lemon Filling:

75g Cornflour (1/2 cup)
210g Caster Sugar (1 cup)
125 ml Lemon Juice (1/2 cup)
310 ml Water (1 1/4 cup)
2 tsp Grated Lemon Rind
3 Egg Yolks
60g Unsalted Butter

Meringue:

4 Egg Whites
105g Caster Sugar (1/2 cup)

  1. I use to love Lemon Meringue Pie, until I discovered that most of those types of ingredients are inflammation-inducing. They say you only live once, its true 🙂 Good video btw.

  2. Very good video. My son has requested lemon meringue pie for his birthday, but I need a pastry shell that doesn't have dairy in it. What would you use to substitute for the butter, preferably not margarine, or can you recommend a different type of pie shell?

  4. I made Lemon Meringue Pie today, but I wish I had found this video first.
    It's not easy to get this right. I followed a recipe that said juice from 6 lemons….now that is a total lottery and we know they differ in size etc a lot.
    I think your butter in the lemon filling would make it a lot richer, and I fully intend to try it.

    Every body raves but it tends to leek from the filling over night
    Do you know why it goes very liquid but they love it because
    It makes the pastry a lovely flavour but it is annoying?????? Many thanks

  8. Thanks for the video and recipe. Very good pie. I have made 2 of your recipes. It tastes like the ones my Grandmother used to make. I did use my regular pie dough in a pie plate for the crust but the lemon filling is so easy and sooooo good!

  9. This was super-easy to make, thanks! My family likes super-tart lemon pies, so I doubled the lemon ingredients and reduced the water accordingly. It's really pretty, and I could eat the whole bowl of filling with a spoon if I didn't have a pie to fill.

  10. I've tried it, it was amazing 😜😜😜, but I recommend to use an other type of meringue:
    use the same ingredients from the recipe but add 3 tbs of sugar.
    mix sugar and egg whites in a big bowl and put it over a pot of boiling water
    mix until it reaches about 60 C (the bowl has to be hot)
    remove the bowl from the pot and begin to whip the mixture until stiff picks form and the bowl as cooled
    for the rest you can follow the recipe shown in the video.
    this type of meringue is much more stronger of the French one
