  3. Unless you're a devout chili head, scotch bonnets or habaneros are too hot. Man, I'm not dropping that in my food. LOL! It took me several years to move up from jalapenos to cayenne peppers. Any pepper hotter than cayenne, you done lost me. But for this recipe I can use spanish aji peppers which look like scotch bonnets but are nowhere as hot.

  8. one of my faves, but I have always had it with "Pigeon Peas" which is the traditional Jamaican bean/pea of choice to my knowledge, also I have never seen rice cooked without putting the lid on the pot before, new one on me. I'll give it a go.

  9. Could you please let me know exact ratio of water and coconut milk for the rice. I love Jamaican food especially peas and rice but it's so hard to measure the water. Sometimes it turns mushy and sometimes it's hard.. πŸ™

    I am going to cook Jamaican food for my friends this Saturday and I am worried about cooking rice now….
    I am thinking about cook the rice in the oven like rice pilaf since I don't have big rice cooker…..
