It’s lunch time, and today I have three exciting but super simple recipes for you. Firstly, my vegan smashed chickpea sandwich is such a good substitute for your classic creamy chicken or tuna sandwich. Second up is my stir-fry veggies and quinoa with spicy peanut sauce. This is one of those recipes that are so good because it’s like, minimal effort, maximum reward. Lastly, I made my favourite lunch which is a huge salad COVERED in dressing with spicy zucchini balls.
In classic Erin fashion, I do not have full recipes for these however all of the ingredients are listed below.
Smashed Chickpea Sandwich
– – Hummus (could use vegan mayo or any other vegan dip)
– Tomato (and any other veg you desire)
– Salt and pepper
Stir-fry quinoa and veg with spicy peanut sauce
– Veggies (again, whatever ones you like)
– Soy Sauce
– Peanut butter
Creamy Falafel Salad
– Falafels or any sort of balls
– Salad Greens
– Veggies (whatever you like to munch on)
– Sweet Chilli Sauce
– Salt and Pepper
