Christmas Pudding (1).
Ingredients of Christmas Pudding:-
1 lb. Raisins (stoned), 1 lb. Chopped apples, 1 lb. Currants, 1 lb. Breadcrumbs, 1/2 lb. Mixed peel, chopped fine, 1 lb. Shelled and ground Brazil nuts, 1/2 lb. Chopped sweet almonds, 1 oz. Bitter almonds (ground), 1 lb. Sugar, 1/2 lb. Butter, 1/2 oz. Mixed spice and six eggs.
Wash, pick, and dry the fruit, rub the butter to the breadcrumbs, pummelled the eggs, and mix the many ingredients together; in the event, the mixture is just too dry, give a little milk. Fill some greased basins with all the mix, and boil the puddings from 3 to 4 hours.

Dissolve a level teaspoonful of soda within a tablespoonful of tepid to warm water. Flour the fruit thoroughly coming from a pint of flour; then mix what’s left as follows:

Mix all dry ingredients thoroughly and add fruit; stir in water and liquid and mix thoroughly. Add more water if essential to make the stiff dough. Fill greased moulds 2/3 full, and steam 2-3 hours. This pudding ought to be prepared and cooked weekly or more before used. Before serving steam an hour and serve with hard, lemon or creamy sauce.
