Hi guys! So I attended a dinner that night where everyone had to bring a vegan dish and this is what I decided to whip up 🙂 That also explains why I made so much! Feel free to halve the ingredients if you’re only making it for yourself/a couple of people. The bowl ended up being empty by the end of the night so I guess it I’d deem this recipe to be a success? Hehe ENJOY!

  3. Also another great gluten free sub for couscous is millet. It's yummy and does have protein like quinoa but I like the flavor better. Only a suggestion. The salad is a beautiful rainbow–isn't that what we should eat all the time? Thanks for sharing!!

  6. Looks so good! In the future you should try resting something like a lid on top of a bunch of tomatoes and running knife along so you cut them all at once 🙂 It would save you time hahaha
