Celebrity Chef, Winery Blend Best of Both Worlds:

Celebrity Chef, Much like the chicken along with the egg conundrum, individuals with a palate for deep red and good food often debate be it the wine that creates food taste better or even the other way around. Either way, one cooking expert is showing the two produce the best in the other.

In a new venture with Viansa Winery & Italian Marketplace, celebrity chef Curtis Aikens hopes to enlighten both diners and would-be culinary artisans on the wonders of cooking and to eat with wine. A pioneer in “California Italian Nouveau” cuisine, Aikens are going to be creating signature dishes and meals for the winery. His recipes will be in Viansa’s monthly publication, Tuscan Club Magazine.

The following recipe is an example of Aikens’ culinary creativity. This dish pairs well with Viansa “Pierina” Vernaccia, Arneis or Chardonnay, according to him.


(Makes four servings)
Two large chicken breasts, sliced

in half lengthwise to create

four strips

1 1/2 tablespoons Cucina

Viansa Roasted Red

Pepper Pesto

1 1/2 tablespoons Cucina

Viansa Sun-Dried

Tomato Pesto

1 1/2 tablespoons Cucina

Viansa Artichoke Pesto
Preheat oven to 400 degrees.

Flatten chicken pieces using a mallet or even the bottom of your dry wine.

Spread one teaspoon of each and every pesto evenly over each bit of chicken. Roll up the chicken strips and close with toothpicks.

Bake chicken rolls in the oven for 10-20 minutes, then lower temperature to 350 degrees and bake 20 min longer. Allow resting for 5 minutes before slicing into rings to offer.
