Badam katli is a rich and healthy sweet recipe made of almond, ghee and sugar. This tantalizing almond barfi can be prepared for any festival or fast (vrat) instantly.
Almonds – 1 cup
Powdered sugar – 1 cup
Ghee – 2 tbsp
Milk – ½ cup
Saffron strands – 10-12
1.Start making badam katli by boiling 2 cups of milk in a vessel. When the water starts boiling, turn off the flame and drop the almonds in it. Cover and keep it aside for 5 minutes. On the other side, take some milk and saffron strands in a bowl and keep aside..
2.Drain out the almonds after 5 minutes and transfer them in a bowl filled with cold water. Now peel the almonds and soak them in hot water for 1 to 1.5 hours.
3.Later, drain out the almonds and put them in a mixer jar along with the saffron mixed milk, ½ cup of plain milk and 2 tbsp of water. Churn to grind everything into fine paste.
4.Now heat a pan with 2 tsp of ghee. When the ghee melts, add almond paste and powdered sugar to it. Keep stirring constantly and cook the mixture on medium flame until the mixture becomes thick.
5.As the mixture becomes thick in consistency, turn off the flame and transfer to the plate. Once the mixture cools down slightly, roll into a big peda with greased hand. Place this rolled dough ball on the greased butter paper and shape it as a rectangle. Now roll it out into 1/3 cm thick sheet with greased rolling pin. Keep aside to set.
6.When the mixture is set nicely, cut it into desired size barfi chunks with pizza cutter and transfer them on a plate. Badam katli is ready.
7.Serve these mouth-watering badam barfi after meals as a dessert or have them whenever you crave for something sweet.
If gets difficult to cut out the barfi, then transfer the mixture into a pan and cook it on low flame until it turns thicker in consistency. Now set the mixture to make barfi.
