EGG MUFFIN CUP RECIPE

Preheat oven to 350 + coat a 12-cup muffin pan with cooking spray.

Whisk together 12 eggs in a large spouted cup and season with salt and pepper.

Add any of the following veggie combo’s below to each muffin cup, filling the cup about half way up (you can mix and match your fillings).

Divide eggs amongst each muffin cup and cook for 20 minutes. Cool and enjoy!

BLACK BEAN + CORN MUFFIN CUP
Black beans, rinsed and drained
frozen corn
scallions, sliced
sprinkle of cumin

TOMATO + FETA EGG MUFFIN CUP RECIPE
baby spinach
diced tomatoes
feta cheese, crumbled
sprinkle of dried oregano

BROCCOLI + CHEDDAR EGG MUFFIN CUP RECIPE
chopped broccoli
cheddar cheese

  1. I've got ? I make green smoothies with Spinach but a little while after drinking it it irritates my stomach..and it does the same when it's in a salad. What do u suggest I do?

  2. My husband and toddler would be all over the broccoli cheese and I would be more inclined to eat the tex mex, but I would put cotija as the cheese. I would also make an Asian inspired egg muffin which might contain typical vegetarian fried rice ingredients such as peas, carrots, cabbage, tamari, rice, I'd put sprouts if I had any. Another one of my favs is spinach cheese.

  4. Hey, I just wanted to ask… You said that you stored your eggs in the fridge? Do you know how long they're good for? I've been reading online that cooked eggs and chicken aren't good after 3 days from being cooked, but I'm sure I eaten chicken at least a week after cooking it and it was still fine. Am I wrong?

  5. I tried this and I really did like them. But, then, I decided to just put the whole thing (layered) in one of those smaller cake pans I got from Dollar Tree. I sliced it into squares. It was easier and very good. I work night shift. I have a habit of not eating much during the day and want to snack in the middle of the night. These are a very healthy alternative to snacking.

  7. I'm not an egg lover, but these sound like a great breakfast idea!  I think I'll try the black bean and corn first, with a dollop of Rotelle tomatoes.  Yum!

  9. OMG I want to try all 3 of these ASAP! I like the feta/tomato idea the most for breakfast and the black bean one for dinner. My husband will most definitely appreciate the broccoli/cheddar combination! 😉 BTW– I just found your channel- & subscribed!   10. Hi Dani, I loved this recipe and was eager to try it myself. Strangely enough, the muffins changed colour … turned to a pale creamish-yellow, unlike the bright yellow as seen in your video. Could I have done something wrong in the process , is this a common thing about eggs ? Looking forward to your reply.
